Chicken and Mushrooms – Simple Paleo Recipe

A delicious meal with two ingredients? Say it ain’t so!

In continuing with our recently formed tradition, my wife and I made a Paleo recipe yesterday (Friday) that we hadn’t tried before.  The theme for this meal was to stay simple, mostly because neither one of us had time to hit the grocery store to get any “unusual” ingredients.

This led us to a recipe called “Just Chicken and Mushrooms” that’s published on a website called Food Wishes.  Not only did the recipe fit our criteria (based on the video, see below, the guy says this really includes only two ingredients) but it was surprisingly good and not bland.

Here are the ingredients (I made some changes from what’s published on Food Wishes):

  • Two large chicken breasts
  • Fresh ground pepper
  • Pinch of sea salt
  • 2 tablespoons of coconut oil
  • 8 ounces of sliced mushrooms
  • 1/2 cup of water
  • 1 tablespoon of butter or ghee

As you might’ve guessed based on the very simple ingredient list, this was very easy to pull together and was ready in about 30 minutes, including prep time. Plus, what I liked most about the recipe is it’s easy to add to, so you can add stuff like red wine vinegar or balsamic vinegar to the mushrooms, add some spices… whatever you’d like.
