Tonight was the first “Try New Recipes Because We’re Tired Of The Same Old Stuff” Friday night at the Carr household, and it couldn’t have gone any better!
To back track, earlier in the week my wife and I decided that we needed to change things up when it comes to our food. After all, there’s only so many grilled chicken and asparagus meals one can eat before they grow tired of said meal.
So, yesterday she sent me a link to The Meanest Momma for an interesting Paleo recipe that looked great, but seemed like a lot of work, so I was a little reluctant to give it a go. But, since I took the day off from work, I figured it would be worth giving the recipe a shot.
The post over at Meanest Momma consisted of two different recipes: one for Coconut Curry Shrimp Stir-Fry and another for Cauliflower Rice. The two recipes definitely put me on momentary overload, but I was able to power through it (I’m so big and brave!) and get everything pulled together and cooked in about 30 minutes, including prep time.
We both loved the meal, it was 100% Paleo, and will definitely be doing it again. You should give it a try, too!
